用料  

olive oil 2 tablespoons
crushed garlic 1 clove
chopped red onions 2
chopped red capsicum 1
chopped yellow capsicum 1
dried penne 400g(13oz)
mascarpone 200g(7oz)
juice of half lemon
chopped flat-leaf parsley 4 tablespoons
black pepper
grated parmesan(optional) 4 tablespoons
serves 4

Penne with capsicum and marscarpone的做法  

  1. Heat oil in large frying pan. Cook garlic, onions and capsicums for 5 to 10 minutes on medium low heat, stirring frequently until vegetables have softened.
    Cook pasta in a large pan of boiling water until al dente. Drain and set aside.

  2. Add half the mascarpone,  the lemon juice, parsley and the seasoning to the capsicum mixture.  Stir to combine.  Cook on medium heat until mascarpone melts.

  3. Add remaining mascarpone to pasta, mix to combine. Pour capsicum mixture into pasta, toss well.  Serve sprinkled with parmesan.
