Soft-Boiled Eggs with Asparagus的做法
Place the eggs (still in their shells) into a small sauce pot and cover them
with cold water. Bring the pot to a boil over medium heat, then reduce the
heat and simmer gently for 3 minutes. Remove from heat and hold the pot
under cool running water to stop the eggs from cooking through.In a wide skillet or frying pan, bring ½-inch of water to a simmer. Add
asparagus spears and cook briefly, only until they turn bright green. Rinse
them with cold water to halt their cooking process. Chop the spears in half
and serve them on a plate alongside the eggs, seasoned with salt to taste.
With the eggs placed either in an eggcup or on the plate, slice off one end of
each egg and dip the asparagus spears into the runny yolks
